TIL All Yeast Leavened Bread Was Once Sourdough

INTERESTING FACT

Before  the 19th century, people believed that all yeast-leavened bread was a sort of sourdough bread since they didn't realize that the sour flavor of the bread wasn't caused by the yeast itself. 

But when microscope technology improved, they learned about this feature and were able to create yeast strains that were packaged and marketed without lactobacillus.
